The confectionery industry uses vast quantities of chocolate and glucose within the manufacturing processes, with chocolate being particularly temperature sensitive. Due to this, it is rare to find chocolate that is heated with trace heating as the hotspots generated from this type of heating would burn the chocolate.
Up until now, hot water has been the only viable method of heating, but this brings its own issues, namely, high energy usage, poor thermal control, potential product contamination, no thermal feedback to name but a few.
